Low carb blueberry cheesecake

Crustless cheesecake with a blueberry compote

This right here is a game changer! Can you believe this desert has no sugar or no carbs!

8oz cream cheese

1 cup heavy whipping cream

1/3 cup stevia

1/4 lemon extract

2 tsp vanilla

Beat the cream cheese until smooth. Mix in sweetener, vanilla extract and lemon extract until well combined. In a separate bowl, beat heavy cream with mixer until stiff peaks form. Fold half of the whipped cream into the cream cheese mixture. Add rest of whipped cream into cream cheese and beat with electric mixer on high until light and fluffy. Refrigerate for at least two hours. Spoon into individual serving dishes. Top with berry compote.

Blueberry compote.

1 cup of fresh blueberries. (Organic is best!)

3 tablespoons of water

1/4 cup of stevia

Combine 1 cup of the blueberries, water, sugar in a small saucepan. Cook over a medium heat for about 10 minutes. Stirring frequently.
